Nut Brittle

Choose your favorite nut. I like walnuts or even better, black walnuts! And you can vary your spice selection to match your nut choice.
  • 1 cup sugar
  • 1/2 cut corn syrup
  • ¼ cup water
  • 1 tsp cinnamon
  • ¼ tsp cardamom
  • 1 tsp ground coriander
  • 2 TBsp butter
  • 1 ½ cups nuts
  • ¼  cup cocoa nibs (optional)
  • Flake salt to top
Note, have all the ingredients assembled and measured in advance, one has to work fast and not take your eyes off the pot as soon as the heat is on.
 
  1. In a heavy bottom pan, stir syrup, water,  spices, and sugar together to hard ball stage (250°F- 265°F - A little of this syrup dropped into cold water will form a hard ball). I use a silicone spatula to stir.
  2. Stir in butter, nuts and optional nibs until golden brown. This will not take long. Remove from the heat.
  3. Stir in soda. It will froth.
  4. Pour into  buttered sheet pan, quickly shaking pan to spread out mixture. Sprinkle the surface with flake salt to taste
  5. Cool and break into pieces
