Okra Marshmallow Delights
This is a “you’ve gotta try it to believe it” recipe. Not too sweet. This is made with raw okra, honey and vanilla, with a texture sort of like Turkish Delight candy. Be prepared. Donna says “It looks like bug spit!” (before it goes into the dehydrator). The taste of these bite-size yummies can grow on you.
- 2 cups sliced fresh okra (cut off the tops)
- 1 cup water
- 1/2 cup honey
- 2 Tablespoons vanilla
- 1/2 cup toasted, ground nuts for rolling (cashews, almonds....)
Rhubarb/Cornmeal Upside Down Cake
This tasty cake is made in a 10” skillet. Careful - skillet can be heavy and hot!
- 1 and 1/2 sticks butter
- 1/2 cup packed light brown sugar
- 4 to 5 stalks of rhubarb cut into 2” pieces - (enough to cover bottom of pan)
- 1 and 1/4 cup all purpose flour
- 1/2 cups yellow cornmeal
- 1 tsp cardamom
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp fine sea salt
- 1 cup sugar
- 2 large eggs, at room temperature
