Okra Marshmallow Delights

This is a “you’ve gotta try it to believe it” recipe. Not too sweet. This is made with raw okra, honey and vanilla, with a texture sort of like Turkish Delight candy. Be prepared. Donna says “It looks like bug spit!” (before it goes into the dehydrator). The taste of these bite-size yummies can grow on you.
  • 2 cups sliced fresh okra (cut off the tops)
  • 1 cup water
  • 1/2 cup honey
  • 2 Tablespoons vanilla
  • 1/2 cup toasted, ground nuts for rolling (cashews, almonds....)

Rhubarb/Cornmeal Upside Down Cake

This tasty cake is made in a 10” skillet. Careful - skillet can be heavy and hot!
  • 1 and 1/2 sticks butter
  • 1/2 cup packed light brown sugar
  • 4 to 5 stalks of rhubarb cut into 2” pieces - (enough to cover bottom of pan)
  • 1 and 1/4 cup all purpose flour
  • 1/2 cups yellow cornmeal
  • 1 tsp cardamom
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1 cup sugar
  • 2 large eggs, at room temperature
