- 2½ cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup (12 Tablespoons) butter or margarine, softened
- ¾ cup sugar
- 2 Tablespooons milk
- 1 egg
- 1 teaspoon vanilla
- 1 cup quick or old-fashioned oats, uncooked
Set oven at 350 degrees F. Sift dry ingredients. Cream butter and sugar. Add milk, egg and vanilla to combine. Add to flour mixture and beat until well blended. Stir in the oats. Chill in refrigerator for an hour or so.
Roll dough on lightly floured surface to ¼ “ thickness. Cut with with cookie cutter. (Use any seasonal shapes – hearts, Xmas trees, bunnies etc.)
Bake on greased cookie sheet or on parchment for 10 to 12 minutes until golden brown. Cool on rack. Decorate with confectioners’ sugar icing or enjoy cookies just plain.
Makes about 4 dozen cookies depending on the size of your cutters.
