Brita’s Hot Milk Cake

American popular cake from the 1940s.

Cake:

  • 2 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup of hot milk
  • 3 Tablespoons butter
  • 1 teaspoon Swedish vanilla sugar (available online at igourmet.com) or replace with real vanilla beans. Extract is not as good.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Frosting

  • 5 Tablespoons brown sugar
  • 2 Tablespoons soft butter
  • 2 Tablespoons heavy cream
  • 1 cup unsweetened coconut flakes

Mix flour, vanilla sugar, baking powder and salt together for the cake. Beat eggs together for 4 minutes, add sugar and continue beating for 4 - 5 minutes. Gradually add flour mixture and carefully combine until all is smooth. Heat milk and butter until butter melts. Pour this into the batter. Bake in 325 deg. F in a 9 x 9 inch dish for 20 - 25 minutes until a pick comes out dry.

Combine all ingredients for the frosting and spread on top of the cake. Put this under the broiler for 2 - 5 minutes. Watch carefully. Enjoy!.
