- 1 cup soft butter
- ½ cup sugar
- 2 teaspoons vanilla
- 1 egg
- 2 teaspoons instant coffee granules (or more to taste)
- ½ cup cocoa
- 1¾ cups flour
- 2 cups finely chopped nuts
- ¼ teaspoon salt
Mix ingredients in order. Chill in the refrigerator for at least an hour.
Form into small balls by hand and drop on a cookie sheet covered with
parchment paper. Bake in a slow oven ( 325 degrees ) for 15 minutes.
Don’t over bake. Cool. Cookies store well in covered container.

These cookies are full of coffee/chocolate flavor and not too sweet.
