Leek and Apple Salad

one pound leeks (use the white part only)
5 or 6 tart apples
juice of one lemon
1/4 cup chopped walnuts (toast them for best taste)
12 to 14 oz. of sour cream (or yoghurt)
salt and pepper to taste

Finely chop leeks
Core and dice apples (leave the skin on)
Toss in bowl with lemon juice
Stir in nuts, salt and pepper
Fold in sour cream
Refrigerate for a least two hours before serving
