For this recipe you will need a large baking pan with high sides for mixing. A big turkey roasting pan works well.
Set oven at 250 degrees F. Butter the sides and bottom of pan. Make enough popcorn to fill the roasting pan 3/4 full.
- In a sauce pan, combine:

1/2 cup dark syrup (you can use "Karo" syrup, but I prefer a lighter syrup like pancake syrup.
I've even splurged and used maple syrup for this recipe. It's all good.) - 2 cups brown sugar
- 1 cup butter
- 1 teaspoon salt
... boil this for 5 minutes over moderate heat
- Remove from heat and add:
- 1/2 teaspoon baking soda
... beat until very foamy, pour over popcorn in roasting pan and mix very well. Work FAST!
Bake at 250 degrees for 1 hour - stirring popcorn every 15 minutes. (Use a buttered spoon.)
Take out of the oven and spread on wax paper to cool. Store in air tight container. Freezes well.
